Yumminess: Down Home Skinnier Biscuits and Gravy

Oh, I know what you're thinking... Biscuits and Gravy on Weight Watchers??  She's crazy!!  Well, that's probably true, but not with this recipe!

I was feeling so good after my WW meeting this Saturday morning and after getting the good news that I had lost 6.4 lbs, that I felt I deserved a treat... BRUNCH!!!  I love brunch, it's absolutely my favorite meal category.  I love the fact that it's sorta breakfast and sorta lunch... but with cocktails.  And this forms a deliciousness called brunch!  This particular morning, I was craving my favorite comfort brunch... fluffy biscuits, buttery scrambled eggs, all smothered in creamy sausage gravy.  Oh, I can't tell you how deep my love of this meal goes... but I can remember my Grandmother making it for me as a child with Pillsbury biscuits and Jimmy Dean sausage gravy... I can remember having it at Sunrise Cafe every Sunday morning in downtown San Clemente, CA, as a teenager... and I can still taste the Five Star Benedict from Five Star Day in Athens, GA, buttermilk biscuits topped with ham, two eggs over easy and sausage gravy, after a long night of partying!  Mmmm mmmm!



However, after my big 6.4 lb loss, I wasn't ready to blow it on a carbo-calori-fattyfat-alicious traditional biscuits and gravy.  So, I stopped by the store and picked up a thing of refrigerator biscuits and eggs, and ran home to lighten up my favorite comfort brunch.  The results... AMAZING!  I got all the satisfaction of one of my favorite treats without all the added fat and calories and I was able to stick to my points - and it's vegetarian!! So here it is:

Nicole's Skinnier Biscuits & Gravy
Serves 2

Pillsbury Refrigerator Buttermilk Biscuits (the small ones, about the size of a silver dollar)
4 Morningstar Farms Sausage Links
2 Tbsp Light Butter
1 tsp Olive Oil
1 1/2 Tbsp Flour
2 cups 1% Milk
Salt & Pepper

1 egg
3 egg whites
1 Tbsp 1% Milk
Cooking Spray
1 tsp. Light Butter

Bake the biscuits as the package indicates.  Once they're thrown in the oven, you can start the gravy.

Cook the sausages according to the package, and remove once cooked.  Set them aside.  Melt butter and olive oil in a skillet over medium heat.  Once melted, add flour.  Whisk until well incorporated.  Cook for about 2 minutes.  While that's cooking, chop up the sausage.  Add 1/2 cup of milk, whisking constantly, until thickened.  Add another 1/2 cup of milk and whisk until thickened.  Add remaining milk and whisk together.  Add salt and pepper to taste.  Allow the gravy to simmer on low until it reaches desired thickness, stirring occasionally.  Once done, remove from heat.

Once the biscuits are out of the oven and cooling and the gravy is done, start the eggs.  Whisk together the egg, egg whites, remaining milk, a pinch of salt and a few grinds of pepper.  Heat a skillet over medium low heat, spray with cooking spray and melt butter in the pan.  Once the butter has melted and the butter foam has subsided, add the eggs.  Once the bottom of the eggs have cooked, run a silicone spatula through it and jiggle pan to get the eggs redistributed.  Continue this until the eggs are 99% done, about 2 - 3 minutes.  Turn off heat and leave the eggs.

Grab two bowls or plates.  In each bowl, place 3 buttermilk biscuits, split, top with half the eggs, and half the gravy mixture.  Grab a fork and ENJOY!  10 points per serving and it's a good size serving... but you'll swear it was more!  I would have taken a picture, but the bowl of food was magically devoured!
